The Story - Peruvian Cafe Canchaque

Our Peruvian Cafe Canchaque is sourced from a cooperative founded in and around the Piuron mountains of Peru.  This traditionally prepared, unwashed coffee production method has defined quality standards in the region, and the process requires strict and consistent quality control during harvest, drying and final selection. The result is a meticulously developed coffee, harvested and hand-processed under the attentive eye of coffee experts belonging to the respected Cooperative, Norandino.

 

Coop Norandino (formally known as CEPICAFE) was founded in March 1995 with 200 members. Today the group has grown into a second level non-profit organization which represents coffee and sugar cane producers of the Piuran mountain region. Norandino’s coffee is exclusive to the specialty market, never mass produced for distribution to major coffee producers,  aligned with their objective establish only respectful and collaborative commercial alliances with their international network of buyers.  Norandino prides quality production under certified organic practices to create a superior coffee, and the collective returns the benefits to its farmers who enjoy access to financing and to development projects.  This has led to diversification of their production base, and the collective now produces other fine traditional products including panela (raw brown sugar), jams and cocoa - not to mention, tourism (this stunning region of rich culture is well worth a visit!).

 

The natural production process used by these experts is well-known for its distinct  and refined flavor profile.  The beans are dried with all of their layers intact (rather than with the bean removed from the coffee cherry - common practice in coffee production).  By leaving it intact during drying, the coffee bean benefits from the natural sugars of the cherry, resulting in an unmatched, deliciously sweet profile.  The aroma is a swirl of cocoa and fudge, and the taste culminates with notes of ripe strawberry, chocolate brownie, and cola notes in this creamy, full-bodied cup.  It is a must-try, but beware, our Peruvian Cafe Canchaque will become a staple in your coffee lineup.
